Preheat oven to 350.
If you are using the mini bundt cake pans you must use both oil or cooking spray AND flour. If you don’t use both, the bundt cakes will stick. They have too many little crevices.
1 Box 16.5 oz Duncan Hines Classic Yellow Cake Mix.
3 Large Eggs.
1 Cup Apple Cider or Apple Juice
1/3 cup Vegetable Oil.
2 Apples Cut Up Into Small Pieces. (You can use any kind of apple. I prefer Honey Crisps with I can get them.)
1 Tablespoon Sugar.
1 Teaspoon Cinnamon.
1/4 Teaspoon Nutmeg.
In a separate bowl mix the cut up apples with the sugar, cinnamon and nutmeg and set aside.
Mix the cake mix with the eggs, apple cider, and the vegetable oil. After you have mixed the batter for about two minutes fold in the apple mixture.
Pour into mini bundt pans or cupcake pans. Bake for 20 minutes or until toothpick comes out clean. Let cool in pans for 5-10 minutes. Loosen edges with a knife and turn out on a cooling rack.
Mix your favorite vanilla frosting with some real maple syrup and drizzle over warm cakes. Sprinkle with walnuts. You could also leave the frosting off and just dust the cakes with powdered sugar. YUM!! ♥S
